This is how I tie my hair rigs pretty much every time. I've settled on the Gamakatsu Gcarp size 6 as my favorite hook though.

I think most people would argue against the length of your hair. Generally, you want the bait to swing where it rests at the back bend of the hook is what I understand. I say this, but I have baited my hair in the past similarly to your video and have caught just as well. I have been experimenting with mono hair rigs lately as mono is cheap, and have caught plenty on it.
My take: many variations of hair rigs can and do work well. I say the best method is find what works in your waters and gives you confidence.
